From Where to Where: Mado Ice Cream

HistoryAbout 300 years passed from Karsambac made with fruit extracts and molasses mixed with snow brought from mountains too ice cream produced at contemporary facilities. Coins in the hands of children waiting for ice cream sellers in front of doors still keep their heat. Because children running behind ice cream cars during hot summer days fulfill their longing for those days by taking their children to buying traditional ice cream.

A great distance was covered from days when it used to be eaten during hot summer and a glass of water used to be drunk to the days that ice cream is eaten at home by looking at the street when it snows. Children do not play on the street like old times… but we still live a memory of the past with ice cream in hands with a secret agreement.

Mado colloborated with everyone returning his childhood with a spoon of ice cream in that secret agreement. It did not make concession of its milk or sahlep. The more it grew, the more it abided to its past. Mado making way in a taste adventure for exactly 150 years came to these days by taking numerous initiator steps and passing difficult bridges and overcoming barriers.

K.Maras ice cream used to be produced in small scale enterprises with traditional methods and manual process of materials until the end of 1970s, deprived of technical information and modern equipment. Touchstone of transition to technology is ice plant opened in K. Maras in 1965 for Mado. The plant was of revolutionary feature for both city and Mado. So ice cream would be made in both winter and summer, ice cream lovers would not have to wait for tasting this unique pleasure for summer months.

History2. generation father Yasar Kanbur producing and selling ice cream in a small store next to Aras dam in the city enlarges the store. In the same year, the first “deep freeze” is brought to the store. So ice cream is kept in cool environment day and night. Firstly machine operated with lever appears and then motor machine is used. Automatic machines are brought to the ice cream shop in 1970. Yasar Pastanesi is opened on Trabzon Caddesi in 1980.

Technological developments for the sector in the country and abroad are followed closely and sleeves are rolled up for Mado brand to be recognized in the world. Machines are ordered from Italy. They work very hard for the production of these machines. Because different taste and consistency in Mado ice cream arising when done with traditional technique by hand-churned is important. Machines are bought after many tests and waiting patiently.

In 1983, technology is implemented for the first time and ice cream production starts. In 1984, MARDO ice cream is introduced into the market. 200 kilos ice cream daily is produced in 300 square meter store with 10-12 persons. Production is made at night and sales are done during day. Firstly, the target is villages and towns around K.Maras. After owning coolant vehicles they go to far cities.

First of all ice cream in cup and then in cornet is sold. Kanbur brothers achieve great things in ice cream business within 10 years. Starting ice cream production with the opportunities of technology in real sense is 1989… ın the same years, the building being milk plant is transferred to Kanbur family with privatization tender. But too much money is required for restoring the plant and furnishing with cutting-edge technological machines. The only thing thought by Kanbur family is to perform traditional ice cream production being heritage from grandfather in the plant rather than money. Under the leadership of Atila Kanbur receiving engineering Education, Mado got a TUBITAK-based research made. The aim of research is to determine the Formula of mixtures having a role in consistency and giving unique taste to K.Maras hand-churned ice cream. After this research, K.Maras ice cream would be produced at the plant based on scientific principles wtih traditional method churning technique. And it was...

Together birth of Mado brand, ice cream sector in K.Maras gains speed. After this difficult process, today, the plant of Yasar Dondurma ve Gıda Maddeleri Anonim Sirketi built on 33 thousand acres is of capability of producing 120 tons ice cream per day. Ice cream is stored from the moment it is produced in the huge stores of the plant without losing taste, melting and spoiling.

Starting from famous Yasar Pastanesi being one of the symbols of K.Maras and competition in ice cream sector of Yasar Dondurma ve Gıda Maddeleri A.S incorporating more than one brands within its structure and presenting new and different products to the consumer profile getting younger to meet the differentiation requirement and to meet freedom for personal requirement and expectations, it brought Marpop brand, ice cream style specific to Turkey.
